Chef Jon Wallace and Jessica Soule’s relationship began with a great meal and an even better bottle of wine. After dating for several years and sharing a mutual passion for American food, wine and spirits, Chef Jon and Jessica decided the next natural step was to combine their passion for hospitality with their entrepreneurial spirit and share it with others. Chef Jon, with his expert ability to produce soul-satisfying contemporary American cuisine, and Jessica, with her in-depth knowledge of American wine and spirits, have married these experiences together to open The Wallace – an upscale contemporary American eatery new to Clinton Hill Brooklyn. Chef Jon began his life long fascination with food from the day he started helping his father tend to his prized vegetable garden and cook his family’s Sunday dinners. Since then, Jon always cherished these culinary memories of his younger years. After an unfulfilling but successful stint in the Magazine industry, Jon found satisfaction by making his way back to those fond food experiences.
Jon found his roots again as a dishwasher at the small but distinguished Brooklyn bistro Lamb & Jaffy (now defunct). From those humble beginnings, Jon quickly rose through the ranks of the restaurant brigade from Manhattan to Brooklyn and out to the Hamptons.
After leaving his position at Buttermilk Channel in 2009, Jon moved on to become Executive Chef at Thistle Hill Tavern, both American eateries focusing on high quality products of season. It was here that Jon began to really develop his identity as a Chef. Now, moving on to open his first restaurant, The Wallace, Jon has taken all of his knowhow and passion to build a restaurant that features refined, elevated and fresh flavors while staying close to his roots of cooking satisfying American fare. He is proud to open this place alongside his fiancée Jessica and is humbled to be a part of the long and growing tradition of Black Chefs making their impact on the American culinary world.
Jessica M. Soule, General Manager & Owner
Jessica Soule first began her career in the restaurant business at Soho’s Zoe, a 2-star New–American restaurant in 2004. It was here that Jessica first learned the in & outs of the hospitality world, what good customer service entails and her knowledge of fine wine and food. Eager to learn more and dive into the culinary world a little deeper- Jessica went on to work at the hip 1-star Chubo Restaurant, a Japanese-French fusion eatery, under Chef Claude Chassagne. After Jessica’s initial stint in the culinary world she went back to school and received an MBA in International Finance from St. John’s University. During this small detour from restaurants Jessica worked for a while in Business. However, as time went on, her roots called her back to marry her business acumen and passion for the hospitality industry. Through these all of experiences, Jessica developed a deep passion for American Wine, taking a special interest in New York State local producers, and the farm to table philosophy, She is eager to bring to Brooklyn the shared passion she and Chef Jon have for all things fresh, American and downright satisfying.
